A Brief History
The rich history of esteemed repertoire that is synonymous with the Le Cordon Bleu College of Culinary Arts is something only a few colleges in the world are able to boast of. Literally meaning “Blue Ribbon”, Cordon Bleu found its origin in 1578, when the Order of the Holy Spirit was created by King Henry III. Members of the order were presented with the award of the Cross of the Holy Spirit, which hung from a blue ribbon, thus giving them the name of Cordon Bleus.
In 1895, a French journalist, Marthe Ditel, began running a culinary publication by the name of "La Cuisinière Cordon Bleu”. This was a weekly publication that went on for the succeeding seventy years, unwittingly becoming the origin for what we now consider to be one of the largest collections of recipes to be found in the world. The fast-growing popularity of the publication laid the foundations for the very first Le Cordon Bleu School in 1895, in Paris. In 1998, Le Cordon Bleu opened a location for students in the United States, sharing with them its rich heritage and history.
